Could you kindly tell me how to make ''Callaloo Soup''?
We're having a party at my job with different cultural dishes and I was thinking of making this. Is there also a recipe for a meatless one as well? I would much appreciate it!

CALLALOO SOUP

Ingredients:

2 chicken stock cubes (maggi)
4 cloves garlic
1 onion
1 scotch bonnet pepper
2 tablespoons butter or margarine
1/2 pound spinach leaves
17 cups water

Directions:

Finely chop the onion and garlic. Drain and chop the washed spinach leaves. Melt butter and fry the garlic and onion until soft and golden. Add two cups of water and heat for 2 minutes. Add the spinach leaves, chicken stock, and the finely sliced chilli to the saucepan and bring to the boil. Then add more water (about 15 cups or so), lower the heat and simmer covered for about 30 minutes. Serve piping hot with bread rolls.

Let me see? First you have to get yourself a couple Callaloos. Their feisty little critters so be careful. They only live on a little island off the coast of Cancun. You can charter a boat to get there. Make sure you tell them your going to hunt Callaloos so they can be prepared. Just take them to your local butcher and he will prepare them for you. You need two because there isn't much meat left when he removes all the goodies that you don't want in your soup. You make this just like chicken soup but it can be pretty expensive because you can't get Callaloos at the market. just do your basic herb veggies, onions carrots, celery, garlic. You got it! I recommend you serve it with some crackers or biscuits.............................Bon Apetit!..................LOL!
