Short grain rice for rice pudding?!


Question: Making Arroz Con Leche, and I ran out of long grain rice. What do you think about substituting it for short grain rice? I hear alot of people using something called pudding rice. But I havent tried it. I have 3 kinds of short grain rice...but no "pudding rice"

For usual English-style rice pudding, short-grain or medium-grain rice will give much better results than long-grain rice. Not sure about Arroz Con Leche personally, but seems many recipes on the internet for this also call for short or medium grain rice.

I made a chicken porridge called "Arroz Caldo," which used sticky rice, which the locals called "malagkit" (sticky rice). I believe it's a short grain. From what I understand, the shorter the grain, the more "sticky" the rice is, usually.
