What can I make with mung beans besides bean sprouts?!

It's really simple to make, but to make it taste better, you can also add pandang leaves (screwpine), kelp (a type of seaweed), orange peel and use palm sugar instead of normal refined sugar.

In the Philippines, we boil the mung beans until they burst. We add it to sauteed garlic, onion, tomato, boiled pork, smoked fish and salted shrimp paste. Just before serving, we add the young leaves of bitter melon or malunggay.

Very healthy.

Without the leaves, the soup tastes almost like split pea soup with smoked ham hocks.
