First of all : your English is NOT awful so stop that right now.

My favourite food is Italian, of course I love the more popular Lasagne & Pizzas of any kind however here are a FEW of other Italian dishes I enjoy. and "Good Luck" in English tomorrow.:

Italian Omelette with ricotta and parmesan cheese.
Bruschetta with tomatoes.
Capri salad with Mozzarella & balsamic vinegar.
Italian potato salad with sun dried tomatoes.
Roman Focaccia bread with mixed red and white onion.
Gorgonzola Pizza with pumpkin or squash.
Chicken Marengo with oyster mushrooms & fresh basil.
Parma wrapped chicken with garlic.
Saltimbocca (it means jump in the mouth) - stuffed rolls of veal & parma ham.
Italian sausage & bean casserole with mash or rice.

Lasagna, Chicken Parm. and Baked Ziti

Unlike the traditional Italian biscotti which are hard enough to dunk into a cup of coffee, this recipe creates a crisp cookie that is delicious but not suitable for dipping. Cranberry and orange is one of my favorite flavor combinations and it works exceptionally well in this recipe. Store these cookies in an airtight container for up to a week, or freeze for up to a month.

    Makes About 16

    --------------------------------------...

    6 Tablespoons Soft Butter

    2/3 Cup Sugar

    2 Large Eggs

    Dash Of Salt

    1 Teaspoon Vanilla Extract

    1 Tablespoon Orange Zest

    2 Tablespoons Orange Juice

    2 Cups All-Purpose Flour

    2 Teaspoons Baking Powder

    1 Cup Dried Cranberries

    1 Cup Pine Nuts

Preheat the oven to 350 degrees F. Cream together the butter and sgar until fluffy. Add the eggs, salt, vanilla, orange juice and zest and mix. Add the flour and baking powder and mix with a wooden spoon just until combined. Add the cranberries and pine nuts and fold into the dough.

Lightly grease a baking sheet and then shape the dough into one log about 4 to 5 inches wide with wet hands. Bake for 30 to 35 minutes or until the center is just about firm to the touch. Remove from the oven and cool for 15 minutes leaving the oven on. Using a serrated knife, cut the log into 1/2 slices. Place the slices flat onto the baking sheet and bake an additional 10 minutes. Cool and store in an airtight container.

I love pureed vegetable soups, but was looking for a way to make a squash soup that was not too sweet. I decided to flavor the chicken broth with a smoked chili pepper which added a little smokiness as well as a little heat. This soup freezes well, and you can use your choice of garnish from chopped fresh herbs, to a dollop of cream, or perhaps some crisp croutons.

    : Serves 4 to 6

    --------------------------------------...

The amount of chicken broth you use depends on how large your squash is, as well as how thick or thin you prefer your soup. This soup is really quite healthy as it is creamy without the use of any cream.

    1 Large Butternut Squash

    1 Medium Onion

    2 Cloves Garlic

    2 Tablespoons Butter

Smoked Chili Pepper (Chipotle Peppers Work Well)

    Salt And Pepper

    1/2 Teaspoon Cinnamon

    Chicken Broth (About 3 Cups)

Cut the squash in half and remove the seeds. Cook the squash by either roasting at 350 degrees F. in the oven until fork tender, or by microwaving it. Let cool to room temperature. Heat the chicken broth in a sauce pan and add the chili. Simmer on low until needed.

Cut the onion and garlic into small dice, and sauté in the butter until tender and soft. Scoop out the pulp from the squash and place it into a food processor along with the onions and garlic, and half of the chicken broth. Puree until smooth, adding additional broth as needed. If you like your food a bit on the spicy side, you can cut the chili in half and add it as well into the food processor to be blended. Once you have a smooth mixture, return the squash to a saucepan and keep warm. Season your soup with cinnamon, salt and pepper. Some people prefer a little more cinnamon than I have indicated, but I find it tastes too much like pumpkin pie if more is added. Serve the soup warm, with your garnish of choice.

    calamari

    Bragioli
    Capuniata (Ratatouille)
