I was checking out an Indian recipe "Lentils & Vegetable Medley" and it called for 2 tsp of subzi blend.?!


Question: I searched that site and the internet but all I get is recipes that call for "subzi". Does anyone know what it is?

subzi means vegetable in Hindi. If the recipe calls for 2 tsp of "subzi blend", it means a pre-made mix of spices that are for vegetables. In Hindi, a spice-mixture is called masala.

If you go to an Indian grocery store, you can find boxes of 'subzi masala' spice mixtures. Please note that sometimes subzi is spelled: sabzi, subji, or sabji.

Subji or Subzi means vegetables, usually use whatever you have at home. This sounds like a "sambhar" recipe, use your favorites! Actually, the great thing about Indian cooking is the flexibility, any vegetable will work or any combination of veggies.
