Hello!
Well, tamales are a traditional food in Mexico and other parts of South America, with a mexican origin. They vary a lot depending on where you are, but they all have one caracteristic: corn dough!
In south America, corn isn't that sweet or yellow, such as those in Canada or the US, instead, they have a neutral flavor.
Corn grains are boiled, then made into a dough that will be mixed with water and shortening and salt (for salt tamales) or sugar (for the sweet ones).
Sweet tamales can be made just of corn, also with pieces of pinneaple, strawberry and some other fruits, I repeat, this depending on the region and recipe.
Salt tamales have lots of kinds: meat (red or green sauce) chili stripes with cheese, mole, etc...
The dough is placed over corn leaves, or banana leaves, filled with the ingredients previously prepared, and then wraped in the same leaf. They are usually boiled for a couple of hours and then eaten, specially hot. =)

They look similar to an enchilada without sauce. They are wrapped and cooked in a sort of corn husk material and then you unpeel them to eat them. They have sort of a corn tortilla taste to them and are stuffed with beans, chicken, pork, or beef.

Some people put chili on them.
