Well if you have ever had to study the taste buds on the tongue you will see that our sweet receptors and our sour receptors are in two different places on our tongue.
We taste sweet on the front/tip of the tongue and sour on the sides. So when you eat a food you can taste the sweet and sour at the same time on the different parts of your tongue.

Don't know if you ever had a Warhead when you were a kid, but they were the "it" candy of my elementary days. They started out so sour you could hardly stand it, and then they were almost disgustingly sweet afterward. It's like that. The makers just put both sour and sweet stuff in it. Like Cry Baby gum, also.
