I use chicken steaks, placed in one long row, with the edges overlapping. I cover them with mustard and pepper. Then I use prunes without pits. The tricky part is to roll this into one long roll, and wrap it in strips of bacon. This I place on a tray and cook for one hour or until well done.
The cranberry jelly I place into a blender with some fresh orange juice. The resulting sauce tastes great when poured over the chicken roll.
This is my -impress the guests- dish, it never fails.
Serve with rice and veggies or a nice salad.
cranberry sauce used lightly, makes a great bread spread for any meat sandwich. It is tart and interesting with pork, turkey and chicken. One year, I put a can of the stuff, the whole berry kind, in cake mix and baked it, told the kids it was cherry cake and nobody was the wiser!
