What's the name of this Chinese food item?!

Question: they are fried little dumplings filled with some sort of white cheese (maybe ricotta?) and are usually served with some sort of sweet red sauce. The ones that I had were triangle shaped, if that helps.

Sounds like you're describing fried won tons filled with cream cheese.... Sometimes I make it with cream cheese with shredded cabbage and toasted sesame seed oil.

Crab rangoon are cream cheese mixed with shredded crab meat instead of cabbage.

Crab rangoon or fried wontons

crab rangoon

Crab Wontons

they are just cream cheese won tons where they add a little powdered sugar to the cream cheese (and sometimes a little lemon juice)
Try making won tons with peanut butter and marshmallows (after they come out of the deep fryer, dust them with a little powdered sugar) Won ton skins are great fun! There are so many sweet and savoury things you can do with them (from pot stickers to ravioli to fried won tons... and the fillings are only limited to your imagination)

They're not Chinese, and they DO contain crab (or "krab") meat in them, hence the name 'crab rangoon'.

Although, cheap ones don't contain much crab, so the taste is overwhelmed by the cream cheese.
