if you plan to keep it for a long time unopened, I would freeze it.

I have an unopened package in the refrigerator that's about 4 months old and it looks fine. The sausages are preserved and vacuum packed so that helps a lot.

All I need is not find a way to use them... :-)

Also to chinese sausage are not preserved like regular sausage, they have more fat, and are cured with rice wine and can last for a long time, if you do freeze them or any portion, remove them from the original package and make smaller bundles that way you do not have defrost the whole thing for a few or 1 or 2.
