Souvlaki~

1/4-cup olive oil
2-tbsp lemon juice
1-tbsp chopped fresh oregano (1-tsp dried)
1 clove garlic, minced
1/4-tsp salt
1/4-tsp pepper
2-lbs pork tenderloins, cut into 1" cubes(or Lamb)

In a shallow nonmetallic dish, combine olive oil, lemon juice, oregano, garlic, salt and pepper
Add pork, turning to coat well
Refrigerate, covered at least 1 hour, (better overnight) stirring occasionally
With slotted spoon, remove pork from marinade, reserve marinade for basting
Thread pork onto 6 skewers **
Place skewers on medium heat barbeque
Grill 7-10 minutes turning frequently and basting with reserve marinade, until pork is no longer pink, but still juicy

**Soak skewers in water for at least 30 minutes before using so they don't burn

    NO I have no information
    I am in California and am Irish...
    but I very often use the dictionary as not to confuse people

    I just marinate the meat I will be using in Italian salad dressing into which I have added extra oregano. Cook it quick in a hot pan. Throw it over salad with Feta cheese and some grilled onion and pita bread on the side.

    Those sticks of meat served in or without a pita.

    Ingredients:
    5 Clove Garlic Finely chopped
    2 lb Meat
    1 A Little Olive Oil
    1 Tablespoon Oregano
    1-2 Pinch Pepper To taste
    2-3 Pinch Salt To taste

    Directions:
    * Cut the meat into 2 x 2 inch cubes.
    * Mix with the rest of the ingredients and marinate, preferably overnight, in the refrigerator.
    * Skewer with or without your favourite vegetables( like mushrooms, peppers, onions or tomatoes) and barbecue at medium heat.
    * Baste with an olive oil, lemon juice and oregano brine.
    * **For a little bit of tang, add 1/4 cup fresh lemon juice to marinade!
