I am a former chef and tend to agree with Lars12801, we here in Canada are very flexible, and enjoy all different types and ethnic based cuisines.

I would find a location your interested in, as Lars said check out the competition, and then decide how you want to proceed, biger towns you have more leaway, smaller not so much, I live in a town outside of Toronto, we had 1 Indian restaurant here for 3 years, then it closed due to financial issues, they were a buffet palce at at one time very popular, sometime you have look at a niche' market something unusal, french and italian are pretty standard and are overdone in my opinion, so if you do choose those cuisine, pick a regional or combo of the coastal Mediteranan cuisine even encompassing some Spanish and Greek foods.

Mix I love both foods so very much. Yum Yum. Just think you could also do wine sampling. The French make really good wine.

Quality at a reasonable price would seem to be a trend these days. It really depends on which region you're talking about too. We Canadians are a varied bunch.

It doesn't matter what canadians like, it matters who your competition is in the area your will be trying to sell your product! go to google maps and type in restaurants in your area and find out exactly what the competition is doing and then do something a little bit different

Where? Those in B.C and Ontario are more into haute cuisine while many people in Saskatchewan and Manitoba are the meat and potatoes type.

The Canadians here in Baja California are a jolly bunch, they like beer and Mexican food. They are good sports about moose and snow jokes, In major Canadian cities (just guessing) there must be plenty of Italian and French restaurants. A really good Mexican restaurant could be a popular novelty. No Taco Bell, please.

I think it depends on your nationality/background/expertise because that would be important in determining the specialty that you would be offering. All I can say is if your cooking is topnotch it doesn't really matter what type cuisine you serve. Canadians are no different from any other patrons who like "good food" anywhere.
