Healthiest bread? Sourdough, pumpernickel, etc.?!
Sourdough is generally a white bread; it's just made by using natural yeasts instead of commercially available bread yeast. White breads are usually less healthy than whole grain breads. There are some whole-grain sourdoughs, though.
Pumpernickel is wheat and rye. As for the wheat part, read what I said before. As for the rye part, well, rye is low glycemic index, and very low in gluten, so is easier for people who have problems digesting gluten.
You can't decide what is the healthiest bread by picking a flavor of bread. The healthiest bread will be one that is made with minimal added sweeteners, no corn syrup, and has more seeds and grains in it. A general rule of thumb is the bread with fewer ingredients will usually be healthier. If you keep reading down this long list of preservatives, sugars and flavorings, that bread will be less healthy than one that's made with say, just flour, molasses, salt and yeast.
Answers: This is a very debatable question, and most people simply don't understand what makes a bread healthy. For example, the person who said, "whole wheat bread." That just isn't necessarily true. There are plenty of "whole wheat" breads that are made mostly with white flour, and have high fructose corn syrup and crap like that. Most commercially available "whole wheat" bread is pretty much just white bread with some brown coloring in it, and a little whole wheat flour. It is very hard to get a bread that is made mostly of whole wheat flour to rise properly. So, most bread makers use a lot of white flour.

Pumpernickel is the best for you if you are dieting because it is the lowest in carbs. Whole wheat bread is the healthiest.
