A Puerto Rican woman told me to boil the plantain first; then, slice it in rounds. Pound these rounds flat and fry them in hot oil. Drain on paper towels.

i cant spell it so im assuming that banana thing.

Hi Cat, the best way to eat plantain is simply to boil them so you enjoy the full flavor. Just put them in a pot, cover with water and bring to a boil. Continue boiling till water changes color. When this happens, the plantain is cooked.

It they are very ripe you don't even need added sweetener. Just slice them on a diagonal and deep fry them. Then drop onto a paper towel to drain grease. Eat them warm.

Plantains In Coconut Milk
4 each Plantains, peeled & sliced
1/4 tsp. Salt
1 tsp. curry powder
1/2 tsp. Cinnamon
1/8 tsp. cloves
1 1/2 cup coconut milk


1. Combine all ingredients except coconut milk in a heavy pot. Pour in 1 c coconut milk & simmer over a low heat until the plantain is tender & milk is absorbed.

2. Add more mil if necessary.

3. Serve hot.

If green, slice and fry till golden. Then put between paper towels and squish the insides out and fry some more till golden brown. This gets them real crispy. Sprinkle with sea salt. I learned this way while living in Costa Rica.

Use very ripe ones...easier on your stomach!

In my family we are divided. One half loves them boiled and the other fries them. They taste better when ripe too, either way.
