yes, Az, New Mexico, Texas & Ca. used to be owned by mexico or most of it. They lost the war to US.
SPanish rice is an off set of a Mexican dish. In Mexico it is more spicy.different rice. I think Chocalate mousse came from France

If you are referring to Paella as Spanish rice, that is from Spain. There are various rice dishes that are from the Latin countries.
Mousse is French. Chocolate was used by the Mayans of Mexico as a beverage.
Mexico is part of Latin America.
