What is your country and what is the signature dish?!

Question: Trinidad and Tobago!

Our food is so awesome it's hard to pick, but the official dish is "Crab and Callalloo". Callalloo is like a thick soup made primarily from spinach. It has coconut milk and steamed crab in it as well, among other ingredients and it is awesome!

Pelau (Rice and meat browned in brown sugar), curry (different from East Indian curry) and my grandmother's butter fish meal are some of my favourites! (Now I'm really hungry...)

I'm from the US, and unfortunately, we are best known for eating fatty food and ruining other countries' delicacies by "americanizing" them.
I'm specifically from the Southeastern US, where we make a lot of fried food- fried chicken, fried okra- and fat-laden foods like macaroni and cheese (a dish made by covering noodles witha thick cheese sauce.)

To the young lady that posted about callaloo- you're mistaken. It's not the name of a soup. It's a green leafy vegetable. Callaloo soup would be made with callaloo, not spinach.
