Does anyone have a recipe for seasoning that goes in sausage?!

Question: I am looking for a tried and true recipe for seasoning for sausage. Something similar in taste (mild) to what you would buy at a grocery store. Thanks for the help.

I use the following to make breakfast sausage for my family. If you like, skip the pepper. This recipe works with about 2 lbs of meat. Plus, it's better when it's sat overnight. Kind of marinates the flavors in the meat.

2 teaspoons dried sage
2 teaspoons salt
1 teaspoon ground black pepper
1/4 teaspoon dried marjoram
1 tablespoon brown sugar
1/8 teaspoon crushed red pepper flakes
1 pinch ground cloves

Get a pepper mill and some good black peppercorns.

For breakfast sausage, sage and allspice is good. BUT GO EASY ON ALLSPICE (if you started with 3 pounds of meat, no more than 1/4 tsp)!!!!!!!

For Italian, you can't beat basil, oregano, and fennel (fennel is a must).

I agree.

For a pound of breakfast sausage I would add a TBSP of sage, a teaspoon each of salt, thyme, and pepper, and maybe a pinch of allspice or nutmeg. For Italian sausage, I would add a TBSP of toasted fennel seeds, a teaspoon each of oregano, basil, thyme and salt and a half teaspoon of pepper.

But then I like peppery and fennelly sausage.

So adjust these basic measure to what you think you would like, fry up a little piece, and see if it is to your liking. Your friends will be impressed!
