I like to make Chile Rellenos, with poblano peppers seared with a torch, then stuffed with pork and cheese, served with refried black beans, rice and homemade tomatillo salsa.

I also made quesadillas a while back- grilled the steak and chicken first (marinated overnight) then spread them between the flour tortillas with monterey jack cheese, garlic, peppers and onions, sauteed until crispy and golden brown on the outside, melty and soft on the inside. I made the tomatillo salsa to go with that also, and Mojitos! Prickly pear mojitos! I sliced and peeled the prickly pear (a gorgeous purple cactus fruit) and smashed it in the bottom of a glass with fresh mint and lime wedges- then put Ten Cane rum in a shaker with sugarcane juice, ice and lime juice, and poured it into the glass. (This was for a friend's birthday.)

I like crunchy tacos, but I make them different than other people- no sour cream or cheese. Sauteed pork with chilies, nopalitos (tender strips of cactus leaves), black beans, salsa, and luscious fresh guacamole on top. I could eat about 6.

I remember the first really good salsa I had. It was at my friend Maria's house. We lived about 5 miles from Tijuana at the time, in Chula Vista. I was about 10. I had never had real salsa before, only the crappy white people kind (Old El Paso and Pace and all that junk that tastes like ketchup.) The salsa was so fresh with delicious tomato flavor, and it seared my mouth but I kept eating it!

Theres so many I love, I love tamales preferably chicken in green salsa, and pazole, green sauce with chicken and queso fresco cut up into it. My neighbor just gave me some food she cooks and it was realy good, it was beef and napoles in Chili Colorado sauce omg! Shes gonna teach me how to cook it one of these weeks!!

chile con carne !
can be made to fit a vegan ( remove the beef and sub with green beans or peas )
red chile sauce ( home made preferred )
onion
garlic
cumin
meat is braised in added stock then stewed together w the chile and spices ( the longer it cooks the better )
cubed chuck (untrimmed ) preffered, the fat gives more flavor and at home i take time to skim any excess.
dried poblano chiles are best ,
