How to make vegetable Chinese fried rice.?!

This recipe for fried rice with veggies will remind you of the fried rice served at Chinese restaurants. Feel free to add more veggies or some tofu for a heartier dish. This recipe is both vegetarian and vegan.
INGREDIENTS:

* 1/4 cup soy sauce
* 3 tbsp dry white wine or rice wine
* 2 tbsp peanut oil
* 2 cloves garlic, minced
* 1 carrot, sliced
* 1 green bell pepper, diced
* 1/2 cup green peas
* 4 cups pre-cooked rice

PREPARATION:
Whisk together the soy sauce and wine and set aside.

Heat the peanut oil in a wok or large skillet. Add the garlic and fry for one minute, stirring. Add the carrot, green pepper and peas. Stir-fry for one or two more minutes, then add the rice, stirring frequently.

Pour the soy sauce and wine over the rice, and stir until well combined and the rice is hot.

Add oil and some soy sauce to a wok or large fry pan, add a couple of beaten eggs (omit eggs if you want vegetarian). Do not scramble! Remove eggs when cooked and slice. Add minced ginger and garlic if you like and veggies of your choice, stir fry until the veggies are done to your preference (I like mine al dente.) Add rice (day old rice works best) and more soy sauce to taste. Add sliced egg. Remove from pan and enjoy!

This is a simple recipe and is probably not the authentic way to do it, but it works & tastes great!

Try adding some roasted or fried nuts: Cashews, peanuts, etc.

Tofu cut into little cubes

Those would make good protein substitutes.

The recipes above are all good but the best trick for good fried rice is to cook the rice a day ahead of time and spread it out flat on a cookie sheet to cool. Put it in the fridge until the next day. This keeps the grains separate and not clumpy.
