Question about chinese chicken and broccoli??!


Question: Ok i have chicken breast, fresh broccoli, oyester sauce, soy sauce and garlic.... do i have to use cornstarch in the recipe for it taste good or not be too runny? can i substitute flour for cornstarch and how would one make the broccoli in this recipe...steam it or cook it down in the wok with the chicken?? any advice appreciated!!

If you lightly coat the chicken with flour before putting it in the pan, the small amount of flour that'll transfer to the pan will act as a thickener so you wouldn't need to add cornstarch or any other thickening agent.

I usually just cook the broccoli in the pan as oppposed to steaming it beforehand since I like my broccoli to still be crisp.

This is what I do and what everyone I know does. I'm Chinese. Boil the broccoli for a couple minutes, then take them out. In a hot skillet, add oil and minced garlic. After the garlic has been sauteed for a while, add the chicken (marinate it with granulated chicken bullion, cornstarch and a little oil). After the chicken is cooked, add the broccoli, soy sauce, and oyster sauce. Saute the mixture for a minute or so. If the mixture isn't thick enough, add tapioca flour(or cornstarch) mixed with water to the skillet. This will thicken up the sauce.

A little corn starch goes a long way. I think adding cashews and green onions would be good.

My dad's a cook :) put a little oil in the pan and when it gets hot enough (the pan should smoke just a little) add the garlic. Saute it briefly for a few seconds (or it will burn) and then add the chicken (which you can mix in a little cornstarch prior to use if you want). Saute the chicken and garlic together for about a minute or two and then empty it all out into a container. The chicken will not be fully cooked so don't eat it! Put the wok/pan back on the stove and put the broccoli in. Season with some salt and just a pinch of sugar, then pour a little water in the wok (this will steam the broccoli). Put a lid over the wok and let the broccoli cook, when the broccoli reaches the desired tenderness add the chicken and garlic back in and season it with the oyster and soy sauce. Stir it around for a while longer to fully cook the chicken, meanwhile mix a little cornstarch with water in a seperate bowl (you just need enough water to make the starch liquid and not lumpy...if your not making too much 1.5 tbs of cornstarch with water will do). Turn the heat on your stove on high and then pour the cornstarch mix over the stirfry, mix evenly to cook the cornstarsh and get an even coating on the food and your done.
