Mexican cheese dip restaurant?!


Question: does anyone know of a good recipe or a site on the net you can buy the good Mexican cheese you get in the restaurant. I have looked and looked and none of the recipes I looked at seemed right .

try this ,its my own and veryyyyyyyyyyyyy simple !
4- long green /anaheim,hatch-new mexico chiles (whatever you have ) or 6oz can fire roasted green chiles
2-cups diced longhorn or any white chedder
3-cups milk ( whole )
place all in pot and bring to med heat (stir constant )
continue to simmer till cheese is completely melted ,remove from heat and serve (you can keep warm w/sterno warmer
fresh fire roasted are best just roast sweat in plastic bag or container till cool then peel skin and seed ,course chop or slice /if you like it spicey/use jalapeno peppers they work the same ..

Tex-Mex Chile con Queso

1 cup grated extra-sharp cheddar cheese
1/2 cup Velveeta, cut into pieces
1/2 cup heavy cream
2 tablespoons chopped peeled yellow onion
2 tablespoons diced tomato
1 jalapeno, stemmed, seeded, and diced
12 ounces homemade or top-quality store bought tortilla Chips

Directions:

Put cheddar and Velveeta into a medium pot set over another pot of simmering water over medium heat and heat until cheese mixture is nearly melted. Add cream and stir constantly with a wooden spoon until cheese mixture is hot and smooth, 35 minutes. Transfer melted cheese mixture to a serving dish and sprinkle onions, tomatoes, and jalapeC1os on top. Serve immediately with chips.

Tex-Mex Chile con Queso serves/makes 4

Muenster maybe? google queso flamedo and a good recipe should come up. p.s if chorizo is not called for it may not be an authentic recipe! hope this helps! mmmm queso flamedo (flaming cheese sounds good!)
