    Ingredients
    Chicken broth (I use 2 large Campbell's tetra packs, homemade would be better)
    1 large can Cream Corn (or 1 cup corn - see note in directions)
    1 small pkg crab / pollock or shredded cooked chicken breast
    Dash Tabasco sauce
    2 egg whites

    Directions
    Pour chicken broth into large pot
    Add corn
    Heat to boiling
    Add crab/pollock/chicken, breaking up into small pieces
    Add dash of Tabasco sauce (to your taste)
    Keeping soup at gentle rolling boil, dribble in egg white in small amounts
    When egg whites have cooked, serve
    Note that if you prefer clear soup, substitute cream corn with 1 cup of corn niblets - but the cream corn adds delicious flavour.

    Chicken stock, soy sauce and sweetcorn and cornflower, thats what they use to thicken it! try adding some chicken chunks aswell its just gorgeous!

    This is my favorite soup! I make this recipe all the time, it's yummy!

    Velvet Chicken & Sweet Corn Soup

    Ingredients:

    1/2 lb boneless chicken breasts, cut into small pieces
    1 tb light soy sauce
    3 cups chicken stock
    one, 17 oz can creamed corn (this will make the soup thick)
    salt & pepper to taste

    Marinade:
    pinch of salt
    2 tsp cornstarch
    2 eggs, beaten

    sesame oil for garnish
    crushed red chili flakes for garnish (optional)

    METHOD:

    In a mixing bowl, combine the chicken with the marinade and refrigerate for 30 minutes.

    Heat the creamed corn along with the soup stock and light soy. When hot add the chicken and marinade while Season with salt & pepper, to taste. Add a few drops of sesame oil drops & crushed red chili flakes to garnish and serve.

    For me I to like a vegetarian one, I use a veggie broth mix from Poland and make it up, add some sugar or natural sweetener, and while I use cream corn (there is not dairy in it), I also use a can of kernel corn, green onions, thicken it with a cornstarch slurry, if you want to liven it up, I have use soya milk or yougart, if you use soya sauce use a light type, even some chopped onions and garlic.

    Most chinese places only use a bit of stock, thicken it add a can of Crm Corn, green onions and some chopped chicken or either fresh crab meat or the artifccal surimi, but for me why add meat to a veg soup??
