i think you should go spanish just because i think that would be easiest for you. you could find more recipes online and the ingredients will be more widely available. a lot of recipes from the other cuisines tend to be the kind that only come out right after a whole lot of practice and experience. also, many people tend to be rather closed-minded about ethnic foods, so spanish food i imagine if its not the same as mexican, it would be right in that ballpark. so it just seems the most guest friendly to me.

Thai food

It depends on what your friends favor most. Find out what they like before you decide on your main course. If you are looking to surprise them try something you think they have never tried before.

Or you can do a sampling of a few different cultures. Have appetizers in one cuisine, Main course in another and desert in another.
