If you can get your hands on some brunost (brown cheese), it is a traditional favourite served on waffles. It would be a great as a taste-tester as it is mild-flavoured, waffles are something lots of people are familiar with, and it can be served in bite-sized pieces on toothpicks. Look for scandinavian food specialty stores in the phone book. Of course, they're not that common, so I hope you live near a big city!

Sn?frisk on crackers, or ridder and jarlsberg with grapes and crackers would be great, but I think brunost on waffles is more representative of Norway.

The most popular & common Norwegian cheese would be JARLSBERG. It's kid friendly, easily available & inexpensive.
I would serve it simply with some crackers & seedless grapes.

Other Norwegian cheeses:

Ridder with its sharp flavour is well suited as a sandwich filling or a simple after-dinner savoury with or without fruit and is a natural choice for cheeseboards.

Brunost is a brown Norwegian whey cheese. It's a strong, sweet, yet somewhat sharp flavor with notes of caramel and goat's milk.

Sn?frisk are a variety of Norwegian fresh cream cheeses.

Ski Queen Gjetost Cheese is a sweet and delicious goat's milk cheese and one of the oldest of all Scandinavian cheeses. Gjetost is a semi-soft whey cheese made from caramelized goat's milk. The flavor is very sweet somewhat like caramel. Gjetost should be served sliced very thin. Gjetost, also called Ski Queen by some, is a very popular cheese in Norway.Serve with coffee, tea and / or fruit.
