Anyone know how to make "Papas con Chili Rojo" ?!
In Mexico there is no such thing as Chili. Chili is a red powder used to flavor chili con carne, a Tex Mex dish.
Answers: You need to buy either chile ancho or chile guajillo, these are dried and need to be hydrated first, then blended with tomatoes onion, garlic, cilantro and salt. There you have your basic sauce. These chiles are not hot, they add color and flavor to food. Cut up some potatoes into cubes, put them in a pot and cover with the sauce. Let them cook until soft and some of the liquid has evaporated. If you want it hot, then add some chipotle, but just some of the liquid in the can, not a whole chile because it is easier to add some more than to take away.
