Question about colored rice (Sushi)?!


Question: I borrowed a couple of books from the library about decorative sushi, and most use colored rice.
How do I make colored rice? I thought of using food dye, but that would just dissolve into the water when I'm boiling the rice.
Any answers?

Yellow rice: cook with turmeric or saffron in the water

Pink rice: cook with beetroot juice

Green rice: cook with pureed green bell pepper

Make a puree of spinach and mix in.

add the food dye to the water then cook the rice. using smaller batches you can have different colors of rice.

They use white rice( which you can buy)
Brown rice( which you can buy)
and you can make yellow rice by just adding powdered
saffron.
Food dye you would have to add after you strain the cooked rice.

Thwoways:
#1. Find a Thai store that sells colored rice.
#2. Cook rice 1/2 done, rinse, add dye to water, then finish cooking rice in colored water.

Mix it in with the vinegar mixture before you pour it over the cooked rice.
