What is it that turns chai into a clay-like color?!

Question: The spices (cinnamon, cardamon, ginger and cloves) and tea (Darjeeling) only make the chai that I make into a beige-like color. The delicious chai that I've had in two different places are in a clay color. What is the ingredient or technique that I'm missing out?
