The cabbage is called "Curtido".
For the curtido
1 large cabbage
1 large carrot, peeled and trimmed
1 medium red bell pepper, stemmed and seeded
1 medium red onion
1 cup champagne vinegar
1/4 cup water, plus more as necessary
1 1/2 tablespoons sugar
1 tablespoon ground cumin
For the sauce
4 large Roma tomatoes
2 jalape?o chili peppers
1 yellow onion
1/2 cup olive oil
1/2 cup water, or as needed
Salt

For the curtido
1 large Napa cabbage
1 large carrot, peeled and trimmed
1 medium red bell pepper, stemmed and seeded
1 medium red onion
1 cup champagne vinegar
1/4 cup water, plus more as necessary
1 1/2 tablespoons sugar
1 tablespoon ground cumin

For the sauce
4 large Roma tomatoes
2 jalape?o chili peppers
1 yellow onion
1/2 cup olive oil
1/2 cup water, or as needed
Salt

For the curtido (cabbage slaw): Cut the vegetables into very thin sticks (julienne), placing them in a large bowl as you work. Add the champagne vinegar, water, sugar and cumin and toss to combine

For the tomato sauce: Over an open flame, grill the tomatoes, jalape?o chili peppers and onion until they are charred. Cut the tomatoes in half, discard the jalape?o chili pepper stems and cut the onions into 1-inch slices.

Heat the oil in a medium saucepan over medium heat, until it shimmers. Add the grilled vegetable pieces, water and salt to taste. Cook for 5 to 7 minutes, adding water as necessary. Transfer to a blender and puree until smooth; taste and adjust seasonings.

Ingredients
5 cups masa harina flour
4 cups water, approximately
16-24 ounces canned refried beans
3 cups soft white cheese
light vegetable oil or light olive oil
Directions
1In a large mixing bowl, gradually stir water into masa harina until dough forms a ball that can be handled.
2Into another bowl, empty the refried beans. Place the grated cheese into a separate bowl.
3Divide dough into about 25 pieces. Roll each into a ball and flatten between the palms of your hands to about 1/2-inch thick. Put a spoonful of beans and a small handful of cheese into the center of each pupusa. Flatten again with the filling inside.
4Heat a heavy, wide-bottomed or flat skillet until hot. Brush with oil and cook pupusas on each side 4-5 minutes until a pale golden-brown. The outside should be firm.

Then I'm not understanding where the cabbage and sauce comes in, please explain further.

You need to finely shred half cabbage and boil it with half spoon of oregano, salt and pepper to taste on a 1 cup of pineapple vinegar and water ( let the water and vinegar start to boiled and drop the cabbage on it ). Let it boil for 8 to 10 minutes and let it cool down. The red sauce: you need 2 finely shop red tomatoes 1/4 chopped onion ( blend it together with 1 peeled garlic and salt to taste.). Enjoy it ..that's what I'm having for dinner some Delicious Pupusas.
