Can I use keilbasa in jambalaya?!

Question: Yes, of course, even the great Louisiana Chef Paul Prudhomme lists it as a substitute ...but do use the spicy kind to off-set the more neutral sweet flavor of the shrimp...it is an accent note not a major player...which is the wonderful thing about Jambalaya....Although it is a distant cousin to "dirty rice",Spanish rice and even the more elegant Paella. A good jambalaya has only a little of this and a little of that and yet at the end is a down-home rice dish that lets each cook decide for themselves.
