This is one of my favorites and it's super easy to make...Oh - and if you want to make it sesame flavored, substitute sesame oil instead of olive oil and then sprinkle in some sesame seeds before serving (about a tablespoon or so)

Chicken & Snow Pea Stir Fry

1 tbsp. olive oil
2 boneless, skinless chicken breasts cut into chunks or strips
1 cup snow peas (can substitute several broccoli spears, cut into 1 inch pieces)
1 garlic clove, minced
1/2 tsp. minced ginger
3/4 c. canned chicken broth
2 tbsp. soy sauce
2 tsp. cornstarch
Pepper to taste

Hot white rice

In 10-inch nonstick skillet, heat oil over medium-high heat until bubbly and hot; add chicken and cook, turning when necessary, until lightly browned on all sides, 3 to 4 minutes. Remove from skillet and set aside.

To same skillet add snow peas (or broccoli), garlic, and ginger and saute for 3-7 minutes. (broccoli will take longer than the snow peas!) In a small mixing bowl combine broth, soy sauce and cornstarch, stirring to dissolve cornstarch; add to snow pea mixture and return chicken to skillet. Reduce heat to low, add pepper and cook, stirring occasionally, until sauce is thickened, 5 to 10 minutes. Serve over hot rice.
