Israeli salad consists of diced tomato and cucumber.
It is usually dressed with fresh lemon juice and olive oil. Parsley and spring onions are sometimes added, but not lettuce.
Generally, the cucumbers are not peeled.
The key is using very fresh vegetables and chopping them as finely as possible, it is served in a pita with falafel or as an independent side dish.

Heres a great recipe: SO EASY TO MAKE!

===Ingredients===
1 cucumber, peeled seeded and diced

2 green onions, chopped
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dill weed
1/4 cup chopped parsley (optional)

Hope that helps!
GOOD LUCK!
