How can i make a Japanese salad?!
I love Japanese food! especially salads!
There are many variations of japanese salads.
Whether it′s crisp and colorful vegetables tossed in a sweet and tart dressing or tender soba noodles drizzled with a savory sesame sauce, Japanese salads are unique, delightful and healthy.
My Favorite is a "Cold Soba Noodle Salad"

RECIPE:
===Ingredients===
1 lb. soba noodles
3 scallions, minced
2 Tbsps. fresh parsley, chopped
1 Tbsp. mirin wine
3 Tbsps. lemon juice
1 tsp. fresh ginger, grated
1 tsp. garlic, pressed
2 Tbsps. yellow or white miso paste
2 tsps. sesame seeds
===Instructions===
Cook soba noodles in a large pan of boiling water about
5 minutes. Drain and rinse with cold water.
Combine noodles,scallions and parsley in a bowl. Combine next 4 ingredients in a separate bowl.
Then mix in miso, working out the lumps with the back of a spoon.
Thin if necessary with a little water, drop by drop. Combine with noodle mixture and chill.
Garnish with sesame seeds

I love to make Japanase cucumber salad. Chop up a bunch of cucumbers and place in Seasoned Rice Vinegar w/ chopped cilantro and a dash of soy sauce. I also like to add a little bit of garlic chili paste for spice. It's refreshing and cooling but more like a small side.
Another great japanese style salad is using watercress with a soy/mirin/muddled cilantro dressing. Blanch some asparagus, let cool and place over the watercress with the dressing. Yum!
