Maybe add more tahini? There's no salt in that and it can't hurt the flavor.

id just add more eggplant

i dont know the particualy dish. but oyu can remove excess salt by cooking a few potato slices in the dish (which you remove when done ofcourse). obviously, this does not work for grilled dishes.

tomato helps tone down the taste of garlic.

make it all over again only with OUT the salt.then mix both batches together.

1 medium eggplant
2 cloves of garlic
1/2 to 1 teaspoon of salt
3 table spoons of tahini
2 tablespoon of lemon juice
2tablespoon of water
roast the eggplant
remove the skin and mash the pulp of eggplant
mash the garlic with the salt and add the tahini, lemon juice and the water. Then mix with the eggplant and serve

Add two more roasted eggplants and olive oil.
