What is your favourite ethnic food (include your resident country if possible) & why?!

Question: Thai food, especially fresh seafood!!
I live in the US, but spent several years living in Thailand. I've always loved seafood, but some of the dishes had to "grow on me". During that time I became very slender, had a ton of energy, even had nicer hair and skin. The food is very unprocessed and meals are balanced. Now back in the US, it's easy for bad eating habits to return:(
