Any folks here ,especially polish folk that can give me a real polish sausage recipe?!

i'm polish.. but i though the germans and italians made sausages..? lol

1 Pork Neck
300g Fat of Pork (or belly)
500g Lean beef (doesnt matter which cut)
1 head of garlic minced
1 cup of paprika
3 tbsp fennel seeds
3 tbsp ground pepper
5 tbsp salt, plain

Put the meat through the mincer twice and place in a bowl. Put the pork fat through the mincer or cut into very small chunks and place in the bowl, followed by the remaining ingredients. Take some of the mixture and put it through a blender with a little water and process till it is pureed. Mix that with the other ingredients until its combined evenly.
