Hiya,

Turkish Coffee (the real stuff!) can be made simply and easily. All you need is a small Turkish Coffee cup, the same size as a small expresso cup.

Then get some Turkish Coffee beans (powdered type) from any Turkish shop, nearly all Turkish shops have them. You can go in and simply ask them for some Turkish Coffee.

Get a very small boiling pan, and put (for one serving of Turkish Coffee) one Tea-Spoon of Turkish Coffee into the pan, one spoon-full of sugar (if you want sugar) and one cup of water (from the same small cup you will be drinking out of).

Put the small pan onto the stove, stir these together and then leave. Bring to the boil (Until the Coffee is just about to rise up inside the pan), pour and enjoy!

This is how you make REAL Turkish Coffee. I am half Turkish/Cypriot, take it from me :)

In order to make turkish coffee, you need to start with fresh medium-roasted beans that are either pulverized using a mortar and pestle or ground in a cylindrical brass coffee mill.

Steps

Preparation

Put extra fine ground coffee (as fine as powdered cocoa, preferably less oily arabica beans) (about one teaspoon (5 ml) per demitasse cup (60 ml) of coffee into a special pot with a wide bottom, narrower neck, a spout, and a long handle, called a cezve.

Add sugar and a Turkish coffee cup (fincan) of cold water for each cup of coffee you're making.

Heat the brew to frothing three times. (When the froth reaches the cezve's narrow neck, it's a sign to remove the pot from the heat and let the froth recede.)


Mixing

After the third froth-up, pour off a bit of the froth into each cup.
Bring the liquid still in the cezve to the froth-point once again, then pour it immediately, muddy grounds and all, into the Turkish coffee cups, which are smaller than demi-tasse cups.

Drinking

Wait at least a minute for the grounds to settle before you pick up the tiny cup and sip.
Enjoy the rich, thick flavor, but stop sipping when you taste the grounds coming through. Leave the "mud" in the bottom of the cup. Some say the positioning of the "mud" at the bottom of the cup can tell a persons fortune.

1 cup water
1 tablespoon of extra finely ground coffee (powder consistency)
1/8 teaspoon ground cardamom, or 1 cardamom pod
sugar (optional)

*Bring water and sugar to a boil in ibrik. If you do not have an ibrik, a small saucepan will work.
*Remove from heat and add coffee and cardamom.
*Return saucepan to heat and allow to come to a boil.
*Remove from heat when coffee foams.
*Again, return to heat, allowing to foam and remove from heat.
*Pour into cup, and allow to sit for a few minutes for the grounds to settle to the bottom of the cup. Cardamom pod may be served in cup for added flavor.
*Turkish coffee must always be served with foam on top.

*If you can't find finely ground Arabic coffee, you can purchase a bag of coffee at any coffeehouse and ask them to grind it for Turkish coffee. You need to have a powder-like consistency.
*Do not stir after pouring into cups; the foam will collapse.
*Always use cold water.

buy it from an arabic/mediterranean store.. and once you do there are instructions on how to make it (in english as well) ... you basically but a special coffee pot,, its made out of metal.. and you fill it with water ..then you wait till the water boils ( on the stove)..then you add about two spoons of the coffeee.
