It's very popular in New Orleans, so I would think, origonaly somewhere in Africa.

From the States and to do with food commonly available for cowboys at the ranches I presume.

South west of the USA, Lousiana and there abouts. It's supposed to be a descendant of Spanish paella, since Spain used to own that area, and later the French, which gave it some influences.

It originally came from the West Indies with the creole mixed race people

Jambalaya is really big in New Orleans but its originally from France.

Hank Williams sang the song Jambalaya in 1952 and it is a Cajun and Creole dish from Louisiana.
By the way, that's crawfish pie hun.

Its a Creole dish ,(Louisiana French + Spanish). It comes from the great state of Louisiana.

Louisiana in the USA , add some alligator + shrimp + man have you got a good meal !!!
