Does authentic Mexican food have cilantro in it?!
Answers: I have to agree with many of the answers here, in some foods, yes. In Hawaii it is called Chinese parsley (interesting fact). I live in South Texas, region with a heavy Mexican culture, love Mexican food, eat it probably 5 out of 8 meals . . . some stuff has it, some does not, but I love cooking with it. You just have to be careful not to overpower the flavor of the food with it.

Yes, but not in all the dishes.
lets say about 60 % of the dish's / and 30% are optional (as a side garnish ) the rest goes in salsa's !

Yes. Take it from a Mexican. depending on whether or not whatever it is you're makin needs cilantro.
Not ALL food, but yes, cilantro is a basic herb in Mexican cooking. Here in the US is widely known as used fresh only (in salsas, etc...) But we (Mexicans) also use it in soups and other hot dishes....The flavor is slightly different than fresh but it's AWESOME!
