Easy to make african food?!


Question: I have a project in which we have to bring in foods that are african. i need an easy recipe please. all I've been able to find is really complex foods.

AFRICAN SPINACH AND PUMPKIN

1 lb. spinach
1 lb. ground beef
1 sm. pumpkin
2 onions, sliced
1 tbsp. fat
2 tsp. salt
1 tbsp. flour
2 c. water

Brown meat and onions in 1 tablespoon fat. Add 1/2 cup water. Peel pumpkin and cut into cubes. Steam pumpkin and mix with meat. Chop spinach, cook and mix with the remaining ingredients. Add salt and boil until mixture thickens. Serve with boiled potatoes.

OR

AFRICAN CHALMAGNE

1 1/2 lbs. veal or lean pork, cubed
1 med. onion, diced
3/4 c. raw rice
1 can cream of chicken soup
1 can cream of mushroom soup
2 soup cans of water
3 tbsp. soy sauce
1 c. celery, diced

Brown meat and onions. Season with salt and pepper. Add remaining ingredients and place in buttered casserole. Bake at 350 degrees for 1 1/2 hours. Keep covered for first hour and then remove cover for last half hour for browning. Serves 6 to 8.

OR

AFRICAN CHICKEN AND GREENS

1 (3 to 4 lb.) chicken, cut up
1 lg. carrots, peeled and sliced
2 tsp. ground coriander
3 (10 oz.) pkgs. frozen spinach or collard greens
1 lg. onion, chopped
1 clove minced garlic
3 tbsp. butter

Put chicken in pieces in large pot with onion, carrots and cover with water. Simmer one hour. Remove chicken and save onion and carrots. Discard stock and melt butter in large fry pan. Add salt, garlic and coriander. Brown chicken on all sides, remove from pan. Place thawed greens in fry pan, cover with layers of browned chicken. Cover and simmer for 15 to 25 minutes. Serve with rice.

OR

AFRICAN CURRIED CABBAGE

1 large cabbage
1 white onion chopped finely
1 medium sized potato, diced small
1 teaspoon curry powder
1/2 teaspoon turmeric (for colour)
pinch of salt
pinch of pepper
1 tablespoon sunflower oil
70ml water

Use a medium sized saucepan and put the tablespoon of oil in to heat up.
Shred cabbage and place in saucepan with the 70ml of water.

Add the salt, pepper, onion and potato.

Make sure that the cabbage begins to soften first before adding the curry powder and turmeric, stir in and make sure all the cabbage is covered in curry powder.

Once you see the cabbage start to cook, turn the heat down a bit and place lid on pot to steam the cabbage, stirring occasionally.

Top water up as necessary to cook cabbage, potatoes and onion.
