How do you cook a 'pot of curry for 30?!


Question: You can basically just multiply your favourite curry recipe accordingly. But in doing so for any recipe, a common mistake is not understanding that for certain ingredients it's not a good idea to multiply by that extent as it can change the whole taste. If you're unfamiliar with the nature of certain ingredients, it may be a good idea to run through with a more experienced cook before buying the stuff & cooking. For cooking a huge amount of curry, I blend up the spice paste first which already has the essential seasonings inside in a concentrated form, plus additional chilli paste on the side to adjust the spiciness if required. This means I have the flexibility to adjust the amount of curry to cook & also adjust the taste uniformly. As for the hardware, 30 is not really a huge number and if you don't have or don't want to buy new super big pots, another way is simply to cook the curry in batches using your existing pots.

ok well have your receipe for how ever many say 4 and times all the ingredients by 10 and then u will have the reciepe for 40 which s even better coz then you have extra just in case someone spills theres or something

Well, first of all you're going to need a BIG pot...

Most curry recipes serve 4-6 people and use standard 5 quart pot. You'll need something about 7 times as large as that...

You'll probably want to go to one of those restaurant supply stores and get a large aluminum cooking pots and lids - something in the 10 gallon size. And you'll probably need to get one of those propane burners - like the ones people use to fry turkeys during Thanksgiving - because there's no way your indoor stove will have enough power to heat a pot that large. Obviously you'll want to do your cooking outside with this burner.

Oh, and you'll need rice. LOTS of rice. I'd recommend using 4 or 5 of those large 10 cup rice cookers, and one of those 50lbs. rice bags.
