Buy a packet of tandoori spice from your local Indian shop must be a good quality brand. From India or Pakistan follow the instructions on the pack. Substitute the meat or chicken for fish. Cook the sauce well, and in advance then add fish when ready as fish cooks very quickly. Enjoy!

I have had it in Canada and in the UK at a takeway place, use a good firm white fleshed fish, salmon is to strong, even marinade the fish with tandoori spice, and let it sit, then bake or pan fry it to a nice brown and then add it to the Tikka masala sauce homemade or store bought and then bake it to complete the dish, serve with basmati rice or naan.

For me Monkfish, Halibut or Haddock fillets are nice, but if you like cod, but pollock is to delicate
