Probably like most Arabic and Turkish coffee...Coffea arabica from Ethiopia.

I think Moroccan Coffee is treated and roasted like expresso, but served very sweet in small cups. It certainly can wake a body up!

Arabica or Robusta coffee beans

Arabica is used for Turkish and Moroccon coffees The ingredients (coffee, water, sugar) is generally boiled together in a small metal pot. Nothing is filtered and upon boiling it is served.
Look for good arabica though, the influx of cheaper Robusta (mainly from Vietnam) has overtaken the availability of pure arabica.
