Sesame oil has a strong nutty flavor that's absolutely delicious, but dont use it for stir-frying! Just add a few drops right before serving, a little goes a long way.

Peanut oil is great for deep frying, it has a really high smoke point.

I like canola oil for it's health benefits & neutral taste.

You can use a canola oil and add your own flavors to this like garlic, red chili flakes, basil, chives....

Vinagrette type of sauces are probably the healthiest, add less oil and alot of flavors: like yuzu, chilies, ginger, sesame, lemongrass, sambals, citrus, tamarind..... be creative!

lol sushi...but its japanese i guess

You might find sesame oil dominates the dish. Peanut oil is what i believe the restaurant use. I would suggest a little olive oil. and browse your local produce market. some things i like with stir fry are daikon (japanese radish) snow pea pods, tofu, fresh soybeans. the list can be endless. Good luck!

Simple Answer: You answered your own question.

Basically speaking, ALL EASTERN/ORIENTAL cooking is healthier than Western style cooking.

Find an Asian or Oriental Market place near you and go there. Ask any of the store personnel. Tell them what you are doing and what they recommend. They are usually "natives" who cook for themselves. Who better to ask than "native" eaters!

However, you have the answer in your question. Go with it. The more veggie the better. Good luck and good eating. Have a plate for me, O.K.?

Sesame oil is used sparingly to add fragrance to a dish and nothing more. You may use any cooking oil of your choice as there is no fixed preference of oil in Chinese cooking. You can cook the chicken breast in stir fry, salads, soups, pasta, roasting, deep fried, etc. Next time try not to use chicken breast meat for cooking, instead you should try using chicken thighs (de-boned) for all your chicken dishes. You will be able to notice a big difference in texture and favour when chicken thighs are used.
