Well I'm not from the "South" and this southern...or Mid West
cooking...but "grits" is like porrage....what I would call hot cereal and you can eat it hot in a bowl, or fry it in the skillet....etc. My mother loved to fry it into patties.
The colli greens are just what they say greens...like spinach...but I'm not sure just which ones they cook...with bacon, etc....and like black-eyed peas are a very popular dish. There are also
fried green tomatoes, yam fries, etc.
