the strong, rich blend of spices. but not all Indian dishes r real real hot. some breads like pa r stuffed with spicy potatos, i make mine withh chillis sometimes. but most breads r plain. flat breads and rice, lots of rice is used in Indian food. for the spicy curries, u need to eat the curries with bread and/or rice to mellow out the spices and give more texture to the food. Indian restaurants use more of the saucy, rich, creamy curries, but authentically the curries r different through Indiia depending on the state. but typical Indian food is noted for mostly the intense mix of spices, flat fried breads, vegetarian. most Indian food is vegetarian. lots of dairy products too.

India is a huge country with a cuisine that is as varied as the other top 5 cuisines in the world (America is not one of them)

Spicing is what Americans may think of when trying to describe Indian food but it is just as important to the other top cuisines in the world...so that seems a little silly to say.

India is a poor country with a rich tradition. They have learned to make an amazing and nuanced array of flavors based on how they use the ingredients available. As an agrarian society, they use vegetables and spices in so many ways that their art eclipses their lack of the usual protein sources...meat...
