Well the standard answer will be "it tastes like chicken" but they don't. If cooked right they are pretty good, medium texture, slightly sweet. Don't criticize if you haven't tried them.
The only Rocky Mountain Oysters I ever tasted were from hogs, deep fried. To me, the texture and taste was similar to chicken livers.
