Those are provinces or regions of China, and those types of foods are considered to be "regional"!. Just like southern cooking is completely different from the Southwest!.
Mongolian uses a lot of hot peppers and beef!.
Szechwan is another that uses a lot of hot peppers, but incorporates a lot of meats and fish (uh, coastal)!.
Mandarin is from that area of China!.!.!.and Singapore is a mish-mash of all of them!.
