It's called Asadero!. It's also called queso because it is used in quesadilla's!. Substitutes are Monteray Jack or Fontina!.

They don't have the same kinds of cheese we have here!. Often they use a crumbled fresh cheese that doesn't melt as much as our Monterey jack does!. They don't have "American" cheese, either!. Use whatever kind of cheese you like!.Www@FoodAQ@Com

most would think it would be cheddar, but my dads friend from mexico uses mozzerella, or pepperjack!.

You can use any kind of cheese!. There are several types of Mexican cheese in the dairy aisles to use!. One is a crumbly cheese and the other melts better!. Can't remember the names off hand!.Www@FoodAQ@Com

its creamier than the mozarella, and somewhat sweeter melts soooo good on the corn tortilla and dipped into a good salsa man o man thats eatting!!!Www@FoodAQ@Com
