These are so yummy! I am looking for a good authentic recipe!. I know they can be stuffed with rice, couscous or even bulghur wheat!. i am not picky, I am just looking for a traditional Middle Eastern recipe!.Www@FoodAQ@Com

Authentic and traditional sounds like white bread and butter, wake me up when it's over!. I think stuffed peppers and my minds eye looks down at a plate with a green orb stuffed solid with rice and meat or a combo of such and I'd like to change the look and still stick with traditional and authentic ingredients, no recipe just the concept, close your eyes and imagine this on the plate:
One glorious Bell Pepper with Falafel balls (quick fried) placed inside along with cubed Halloumi cheese (mozzarella) and sliced or chopped mushrooms!. This combo has been baked for about 25 mins!. to soften the peppers and allowed the cheese to melt, here's the fun part, do we top these when plated with a rustic garlic tomato sauce or a tahini, either way would work, to the right we see grilled eggplant with just a little salt, pepper and olive oil, next to that a crisp clean rough chopped cucumber tomato and mint vinaigrette salad!. I'll give you Bulgarians one!.
You need:
2 big red peppers for one person( 8 for 4ps), 6-7 tsp oil, 1 cup of coffee rice( bulghur or groats in English), 300 g minced meat, hot pepper, salt, savory, nutmeg!.

Fry rice and minced meat!. Mix with spices!. Fill the peppers!. Put warm water by 1/2!. Sprinkle with oil!. Bake in oven in 200oC for 1 hour !.

suggest you adapt this to use peppers!.

Typical middle eastern ingredients are mint, sultanas, apricots, honey, pine nuts, cumin, coriander so any or all can be used as you prefer

Stuffed Tomatoes
Origin: Egypt Period: Traditional

Ingredients

40g cracked wheat
6 Large tomatoes
4 Small tomatoes, blanched, peeled and chopped
Chives
Parsley
Fresh mint
3 tbsp olive oil
1 tbsp lemon juice
salt and black pepper
A few lettuce leaves, washed



Method:

Add the wheat to a bowl, cover with water and allow to stand for an hour!. Wash the large tomatoes, cut off the top and scoop out the pulp!. Sprinkle the insides with salt then turn upside down and allow to drain!.

Chop the herbs then prepare a dressing by whisking together the oil,lemon juice, salt, and pepper!. Drain the wheat then combine with the chopped tomatoes, herbs and onions!. Toss with the salad dressing and use this mixture to stuff the large tomatoes!. Arrange these on a bed of lettuce and serve!.Www@FoodAQ@Com
