Golumpkis

Ingredients

12 large cabbage leaves
1 1/8 lbs ground beef
1/8 lb pork sausage or ground pork (or use ground beef)
1/2 cup rice, cooked with
1 tablespoon butter
1 egg
1/3 cup milk
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sweet basil
1 teaspoon garlic powder
1 tablespoon paprika
1 1/2 tablespoons onions, grated
1 1/2 tablespoons celery, diced
1/4 cup shredded carrots
1/2 cup cabbage, shredded
2(8 oz)cans tomato sauce
1 tablespoon brown sugar

Directions
? Cover cabbage leaves with boiling water(or vinegar), let stand until leaves are limp (2-3 minutes); then drain!.
? Mix beef,port, rice, egg, milk, seasonings, and vegetables!.
? Put 1 tbsp of meat mixture in center of each leaf; tuck in sides and roll to cover meat!.
? Place, seam side down in baking dish!.
? Mix tomato sauce with the sugar, pour over rolls!.

How about German Galushdi's: We make them the same way she listed just skip the celery, basil, milk, sugar, carrots, tomato sauce but instead use lots of garlic in the mix!. Then use Saurkraut to cook them in a pot in layers!. Cabbage Rolls, Saurkraut alternating to fill the pot!. Add some Saurkraut juice or water and boil for about an hour!.Www@FoodAQ@Com

STUFFED CABBAGE ROLLS - POLISH
GOLUMPKI

2 c!. cooked rice
1 to 1 1/2 lbs!. raw ground beef
1/4 c!. diced, minced onion
1/4 tsp!. salt & pepper
1 med!. green head of cabbage

SAUCE:

1 can tomato soup
1 bouillon cube, dissolved in 1/2 can of water
2 tbsp!. sour cream

Mix together the rice, raw ground beef and onion!. Boil the head of cabbage after coring it, just to loosen the leaves for about 3 to 5 minutes!. Take 1 leaf out at a time and fill it with approximately 2 tablespoonfuls of rice-meat mixture!. Fold it over horizontally and then bring in the sides of leaf to make a pocket!. Arrange in a covered casserole dish or roasting pan and bake at 350 degrees for 1 hour!.

Mix the sauce ingredients until creamy and spoon over the finished golumpki!. Serve with rye bread and Polish sausage!. Serves about 6 to 8 people!.Www@FoodAQ@Com

1!.5 - 2 lb ground beef (depends on how large you like the rolls)
2 eggs
2 tsp!. salt
1 Tbs paprika
1/4 tsp black pepper
3/4 c of rice
2 large Bay leaves
1 lg white onion, chopped
3 Tbs vegetable oil
1 large cabbage
1 jar or pack of sauerkraut - not use canned - rinsed

Heat oven to 350 degrees F!. Brown the chopped onion in oil, and place in mixing bowl with ground beef, eggs, uncooked rice, paprika, salt and pepper!. Mix well!.

Take out the core of the cabbage, but leave head whole!. Place in large pot of boiling water until outer leaves begin to wilt!. Gently pull off whole cabbage leaves, trim off thick center vein and make a pile of the wilted leaves in a large bowl to work from!.

Place 2 Tbs of meat and rice mixture on a leaf (starting at the thick end) and roll it up and tuck in ends!. You can secure them with a toothpick if you'd like!. Make as many as you can using the meat and cabbage leaves!. Arrange the rolls in one layer in a large roasting pan!.

Cover the rolls with 2/3 up their sides with water, top with sauerkraut, cover and cook about 1 1/2 hours, or until the rice is tender!.

Sometimes I will tuck in chunks of kielbasa when I make it with sauerkraut!. Often, I'll skip the sauerkraut and water, and will make a tomato sauce using one large can of crushed tomatoes, one large can of tomato sauce, a tablespoon of sugar and two tablespoons of paprika, and will even toss in some diced mild pepperoni!.Www@FoodAQ@Com
